Easy, tasty salad, green lentils may be found at natural foods store etc. Serve with crusty bread or use the salad to fill pita bread if desired Ingredients:
8 cups mixed salad greens |
1/4 red onion sliced |
1/2 cucumber slicedinto half moons |
2 tomatoes cut into wedges |
16 kalamata olives, pitted |
1 cup cooked green lentils |
feta cheese as neeede to crumble over slalad |
dressing |
1 tbs dijon mustard |
3 tbs red wine vinegar |
1 clove garlic minced |
salt and pepper to taste |
Directions:
1. Prep does not include the cooking of the lentils! 2. Make vinegrette and place in shaker jar, shake to combine 3. Place salad ingrdients in a large bowl 4. Pour on dressing 5. Toss lightly to combine 6. Crumble on feta over top 7. Serve immediately 8. Multiply recipe as needed! |
