Try our Mediterranean-inspired spread on whole wheat crackers or pita wedges. Or, try as a dip for raw vegetables.
Ingredients:
1/2 cup light mayonnaise
1/4 cup (2 ounces) 1/3-less-fat cream cheese
2 (10-ounce) packages frozen chopped spinach, thawed, drained, and squeezed dry
1 (4-ounce) package crumbled feta cheese
2 plum tomatoes, diced
1/4 cup chopped pitted kalamata olives
1/4 teaspoon salt
1/8 teaspoon black pepper
1 garlic clove, minced
Directions:
1. Combine mayonnaise and cream cheese, stirring until smooth. Stir in spinach and remaining ingredients. Cover and chill 30 minutes or until ready to serve.
