Delicious salad that's a combination of Italian and Syrian. Great in a pita pocket. Ingredients:
3c torn romaine |
1 plum tomato,sliced |
1/2c julienned sweet red pepper |
1/2c sliced,seeded,peeled cucumber |
1/3c chickpeas |
1/4c sliced fennel bulb |
1/4c chopped celery |
6 pitted ripe or greek olives |
1 green onion,thinly sliced |
dressing |
2tbs lemon juice |
1tbs olive oil |
1 garlic clove,minced |
1tsp fresh minced cilantro |
1 tsp water |
1/2 tsp minced fresh mint or 1/8 tsp dried mint |
1/2 tsp minced,fresh oregano or 1/8tsp dried oregano |
1/2tsp grated lemon peel |
dash of salt and pepper |
1tbs crumbled feta cheese |
Directions:
1. In a small serving bowl,combine first 9 ingredients. 2. For dressing,in a jar with tight fitting lid,combine lemon juice,oil,garlic,cilantro,water,mint,oregano,lemon peel,salt and pepper;shake well. Drizzle over salad;toss to coat.. Sprinkle with cheese. 3. I like more cheese! |
