An easy way to jazz up homemade fries...great as an appetizer or a side for a Mediterranean style chicken or fish dish. I fry the taters, but you could bake these, too. Ingredients:
3 medium russet potatoes, sliced into fries |
4oz feta cheese, crumbledd |
1/4 cup kalamata olives, sliced |
2-3t balsamic vinegar |
1t lemon grass, chopped |
1/2t dried oregano |
1t parsley flakes |
1t paprika |
1/2t sea or kosher salt |
1 clove garlic, crushed or minced |
1/4 cup dressing quality olive oil |
peanut oil for frying, if desired |
*if lemongrass is unavailable, you can use green onion tops and a touch of lemon juice to replace part of the vinegar |
Directions:
1. Fry potatoes in 375degree oil for 5-7 minutes, until golden brown.(or, bake in 450 oven for about 35-40 minutes, until cooked though) 2. Meanwhile, in large bowl, combine vinegar and spices and slowly whisk in oil to combine. 3. Drain fried potatoes on brown paper or paper towels then add to bowl 4. Toss to combine. 5. Arrange on serving plates or on platter, and top with feta cheese and sliced olives. 6. ~you can place fries in 250 oven for a few minutes to rewarm, if needed, before adding the cheese and olives-these don't need to be served steaming hot, but you will prolly need a fork! :) |
