It's not really Greek, but it has that delicious combo of feta and spinach that I love in Greek food. So incredibly easy to make, serves a lot of people, and goes really well with some warm marinara (which is also not Greek, but still tastes good). Read more . One of those dishes that tastes deceptively simple but you just want to keep eating it.
Ingredients:
3 cups bisquick baking mix
3 eggs
1 1/2 cup buttermilk
3 cups crumbled feta cheese (flavored or reduced fat if you prefer), divided
1 cup frozen chopped spinach, thawed and drained
1/4 cup butter, melted
salt to taste
Directions:
1. Preheat the oven to 350 degrees. Line a jelly roll pan or baking sheet with foil and then grease the foil. Set aside.
2. In a medium bowl, mix baking mix, eggs, and buttermilk until combined.
3. Mix in 1 cup of feta and all the spinach.
4. Spread dough mixture evenly in the foil lined pan. Drizzle melted butter over dough, and then crumble the remaining feta over the mixture. You can sprinkle some salt over the pan as well to add a little more oomph.
5. Bake 35-40 minutes, or until golden brown.
6. Let cool 10-15 minutes, then pull the entire loaf out and transfer to a cutting board. Remove foil. Using a pizza cutter, cut into bite sized squares.
7. Serve with simple marinara sauce.
