Ingredients:
2 firm cucumbers, sliced 3/4 thick then quartered
2 softball sized tomatoes, cut into chunks size of cukes
1 sweet onion, cut up same
1/2 block of firm feta cheese, crumbled
1/2 pint of pitted kalamata olives
dressing
1/3 c. balsamic vinegar
1 c. olive oil
2 tbsp oregano
1 tbsp sweet paprika
2 tsp garlic powder
1 tsp salt
ground pepper to taste
Directions:
1. Mix vegetables together
2. Crumble feta over top
3. Blend dressing and stir all together
4. Refrigerate 20 min. best served cold
