2 firm cucumbers, sliced 3/4 thick then quartered |
2 softball sized tomatoes, cut into chunks size of cukes |
1 sweet onion, cut up same |
1/2 block of firm feta cheese, crumbled |
1/2 pint of pitted kalamata olives |
dressing |
1/3 c. balsamic vinegar |
1 c. olive oil |
2 tbsp oregano |
1 tbsp sweet paprika |
2 tsp garlic powder |
1 tsp salt |
ground pepper to taste |
Directions:
1. Mix vegetables together 2. Crumble feta over top 3. Blend dressing and stir all together 4. Refrigerate 20 min. best served cold |
