This recipe is from the Cofiat Taverna in Greece. It is different from others I have made and has a very special flavor all its' own. I enjoyed it, but then aubergines are one of my favorite foods.. Ingredients:
6 round eggplant |
3 cloves garlic. |
onion to taste |
olive oil. |
lemon juice. |
kosher or grey salt and pepper. |
parsley. |
Directions:
1. Prick the eggplant with a fork and bake them in a hot oven. 2. When they are soft, cool them and peel them carefully. 3. Chop the eggplant and put them through a blender until they become a pulp. 4. Gradually add the onion, garlic, parsley and lemon juice to this mixture and continue blending until it becomes soft. 5. Season to taste. |
