I found this in TOH and I think it would make a great lunch or appetizer. I love that it has meat, cheese and veggie. I did not include the marinating time in the prep. Ingredients:
24 roasted red peppers, strips |
1 lb mozarella cheese, cut into 48 1/2inch cubes |
24 broccoli florets |
24 slices hard salami |
1/2 cup greek vinaigrette |
Directions:
1. It might be a good idea to blanch the broccoli first. Put all ingredients in a large ziploc bag and marinate for 4 hours in the refrigerator. 2. Discard marinade and thread ingredients onto small skewers. |
