A simple yet delicious soup Ingredients:
3 cups chickpeas, dried (about 1 3/4 pounds) |
8 cups water |
1/4 cup olive oil |
1 onion, finely chopped |
3 cloves garlic, minced |
1 teaspoon sage, fresh, minced |
2 teaspoons salt |
1/2 teaspoon black pepper, freshly ground |
1/3 cup lemon juice, fresh |
Directions:
1. Heat the oil in a non-reactive pan and saute the onion, garlic and sage until the onion is quite soft. Add the water and chickpeas, bring to a boil and cook for about one hour, or until the chickpeas are very soft. 2. Add the salt, pepper and lemon juice. Puree the soup with a hand-held blender, or puree in batches in a blender or food processor. Alternately, you can just whisk the soup very vigorously to break up most of the chickpeas, leaving the soup somewhat chunky. 3. Serving size is about 1 1/4 cups. |
