Greek Chicken With Squash |

I just threw this together tonight and it turned out very nice! If you don't like spice, just skip the garlic chili sauce (it is utterly not Mediterranean, but it tastes good!). Ingredients:
1 lb chicken, cubed |
2 tablespoons olive oil |
1 tablespoon chili-garlic sauce |
2 -3 garlic cloves, minced |
1 tablespoon balsamic vinegar |
1 teaspoon fennel seed, ground |
1/2 teaspoon cumin |
1 small squash, sliced (i used yellow squash) |
1/2 red bell pepper, diced |
1/2 small onion, diced |
1/4-1/2 cup feta cheese |
1/4 cup kalamata olive, pitted and halved |
1 teaspoon oregano |
1/2 teaspoon nutmeg |
Directions:
1. Heat olive oil, garlic, chili garlic sauce, vinegar, fennel, and cumin. Once warm, add the chicken. Cook until it is almost cooked through. 2. Add the bell pepper and onion. Cook until the onion is starting to get soft. Add the squash and olives and cook until the onion is clear. 3. Add the feta cheese. Mix well. Add oregano and nutmeg. Mix well. 4. Serve with steamed vegetables. I like to steam mine with a little balsamic vinegar and garlic chili sauce added. |
