Greek Chicken and Artichoke Penne |

something i just put together for a quick dinner Ingredients:
1 1/2 lbs boneless skinless chicken breast halves |
1 tablespoon olive oil |
1 tablespoon butter |
1 tablespoon minced garlic clove |
1 (13 3/4 ounce) can artichoke hearts in brine (reserve liquid) |
2 cups chicken broth |
1 (14 ounce) can diced tomatoes with basil oregano and garlic |
1/4 teaspoon oregano |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
3/4 lb penne pasta |
4 ounces feta cheese, crumbles |
Directions:
1. Boil Pasta in salted water till done. 2. Wash and dice raw chicken breast. 3. Heat oil add butter and melt. 4. Saute' chicken breast for 7 minutes. 5. Add garlic saute 3 minutes. 6. Season with salt, pepper and oregano. 7. Add tomatoes and chicken broth 8. Simmer for 10 minutes. 9. Pour sauce over pasta and top with feta cheese. |
