Ingredients:
3/4 cup olive oil |
1/4 cup lemon juice |
1/4 cup egg substitute |
2 garlic cloves, pressed |
1 teaspoon dried oregano |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 head romaine lettuce, torn |
3/4 cup kalamata olives |
1 small red onion, thinly sliced |
1/2 cup crumbled feta cheese |

Directions:
1. Whisk together olive oil and next 6 ingredients in a small bowl. Cover and chill up to 2 days. 2. Combine lettuce and next 3 ingredients in a large bowl; gradually add enough olive oil mixture to coat leaves, tossing gently. Sprinkle with croutons, and serve with remaining olive oil mixture. |
