Greek Bow-Tie Pasta Salad |

The bow-ties and anchovy paste make a neat difference. This is fabulous with just about anything in the summertime. Ingredients:
1 lb bow tie pasta |
1/2 cup extra virgin olive oil |
1/3 cup lemon juice (probably about one lemon's worth) |
1 tablespoon anchovy paste |
2 garlic cloves, minced |
1 teaspoon dried oregano leaves, crumbled |
1 pinch each salt and pepper |
1 english cucumber, diced |
2 cups small cherry tomatoes |
2 cups good quality black olives, pitted |
1 cup chopped red onion |
1/2 cup chopped fresh parsley |
1 cup finely diced feta cheese (about 4 oz/125 g) |
Directions:
1. In a large pot of boiling salted water, cook pasta for 8 to 10 minutes or until almost tender but firm; drain well let cool. 2. Meanwhile, whisk together oil, lemon juice, anchovy paste, garlic, oregano, salt and pepper; toss with pasta. 3. Add tomatoes, sliced olives (leave whole if small), cucumbers, onion and parsley; toss to coat well. Gently stir in feta cheese. 4. Chill until ready to eat. |
