Another awesome estate sale recipe that is tried and true. Since I am a huge fan of Greek food, when I purchased this collection I had to try this and it is a hit. Enjoy Ingredients:
2 cups dried fava beans |
1 tablespoon fresh lemon juice |
1 tablespoon minced garlic |
1/4 cup chopped fresh mint |
4 tablespoons minced red onion |
1 tablespoon olive oil |
Directions:
1. Rinse beans then place in pot with water to cover by 2 inches. 2. Bring to boil then partly cover and simmer for 2 hours. 3. Let cool then stir in lemon juice, garlic, olive oil, mint and onion. 4. Serve at room temperature or chill for one hour. |
