Could be main course for a filling lunch or sides with picnic. Easy to throw together, keeps well for up to 5 days,no meat Ingredients:
1 15oz can red kidney beans, drained and rinsed |
1 15oz can black beans,drained and rinsed |
1 15oz can garbanzo beans, drained and rinsed |
1 12oz jar marinated artichoke hearts, quartered |
1/4 cup, chopped kalamata olives |
1/4 cup, crumbled feta cheese |
juice of one lemon |
1/4 cup extra virgin olive oil |
1/2 teaspoon, dried oregano leaves |
Directions:
1. Toss all ingredients together in large bowl. 2. Serve immediately. 3. Refrigerate leftovers up to one week. |
