Could be main course for a filling lunch or sides with picnic. Easy to throw together, keeps well for up to 5 days,no meat
Ingredients:
1 15oz can red kidney beans, drained and rinsed
1 15oz can black beans,drained and rinsed
1 15oz can garbanzo beans, drained and rinsed
1 12oz jar marinated artichoke hearts, quartered
1/4 cup, chopped kalamata olives
1/4 cup, crumbled feta cheese
juice of one lemon
1/4 cup extra virgin olive oil
1/2 teaspoon, dried oregano leaves
Directions:
1. Toss all ingredients together in large bowl.
2. Serve immediately.
3. Refrigerate leftovers up to one week.
