A classic Greek fish dish, simple to prepare and tasty too. Ingredients:
4 (8 ounce) cod fish fillets |
4 tablespoons olive oil, plus extra for greasing |
2 garlic cloves, finely sliced |
4 tablespoons fresh parsley, finely chopped |
1 lb tomato, peeled, de-seeded and finely chopped |
2 tablespoons toasted breadcrumbs |
fresh ground black pepper |
Directions:
1. Preheat the oven to 375°F 2. Wash and dry the fresh fish and arrange in a medium sized, oiled baking dish. 3. Mix together all the other ingredients, apart from the breadcrumbs. 4. Spread some of this mixture over each fish fillet, sprinkle with breadcrumbs and bake for 30-40 minutes, basting occasionally, until light golden and crisp on top. Serve. |
