Greek Baked Chicken A La Nikis |

This recipe comes from Niki's West Restaurant in Alabama. Even my Greek Uncle likes it! Ingredients:
4 pounds chicken pieces (bone in with skin intact) |
1/2 cup olive oil |
3 cloves garlic, minced |
1 teaspoon dried rosemary, crushed or 1 tablespoon fresh |
1 teaspoon dried thyme, crushed or 1 tablespoon fresh (chopped) |
1 teaspoon dried oregano, crushed or 1 tablespoon fresh (chopped) |
juice of 2 lemons |
Directions:
1. Combine oil, garlic, herbs and lemon juice. 2. Arrange chicken in glass 13x9 inch baking dish. 3. Pour marinade over chicken, turning several times to coat. 4. Cover and chill overnight. 5. Cover with foil and bake (marinade and all) at 350 degrees for 30 minutes. 6. Uncover, baste with pan juices and bake, uncovered 25 to 30 minutes or until nicely browned. |
