Greek and Cucumber and Tomato Salad

Ingredients:
1/4 cup(s) chopped parsley
2/3 cup(s) coarsely chopped red onion
1/3 cup(s) cup chopped fresh mint
1 tablespoon(s) granulated sugar
2 large english hothouse cucumbers (each about 12 inches long)
3 large tomatoes, seeded, coarsely chopped
2 tablespoon(s) olive oil
1/3 cup(s) red wine vinegar
1 teaspoon(s) salt
Directions:
1. Cut cucumbers in half lengthwise; scrape out seeds. Cut halves diagonally into 1/2 inch-wide pieces. Place in large bowl. Add vinegar, sugar and salt. Let stand at room temperature 1 hour; toss occasionally.
2. Add tomatoes, red onion, mint and oil to cucumbers and toss to blend. Season salad with salt and pepper.
