                    I really quick salad/side dish. I let mine marinate in the fridge for an hour or so to really absorb and blend the flavours. Ingredients: 
                    
                        
                                                4 medium tomatoes, cut into 1/4 inch slices  |  
                                                1 small red onion, thinly sliced and separated into rings  |  
                                                3/4 cup feta cheese, crumbled  |  
                                                1/4 cup fresh parsley, minced  |  
                                                1/2 teaspoon salt  |  
                                                1/2 teaspoon fresh coarse ground black pepper  |  
                                                1 tablespoon olive oil  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Arrange tomato and onion slices on a plate. 2. Sprinkle with the feta cheese, parsley, salt and pepper. 3. Drizzle with oil. 4. Cover and refrigerate for 15 minutes.                              |
