wilted spinach with feta cheese Ingredients:
1 tablespoon olive oil |
1/2 red onion, sliced into thin rings |
2 lbs. fresh baby spinach, washed & stemmed |
1/2 teaspoon grated lemon peel |
1 salt to taste |
1 black pepper to taste |
1/4 cup crumbled feta cheese |
Directions:
1. Heat large pan with lid over med/high heat (if pan cannot hold all the spinach, cut recipe in half). 2. Add oil and sliced red onion. Saute until onion starts to wilt. 3. Add spinach and quickly saute for 2-3 minutes. 4. Add lemon peel, salt and pepper. 5. Cook a few seconds more to release flavors. 6. Add crumbled feta cheese and stir to incorporate. 7. Transfer to serving dish and serve immediately. |
