A quick and easy side dish that really shines using fresh oregano. Ingredients:
2 medium potatoes, peeled and cubed |
2 tablespoons lemon juice |
5 1/2 teaspoons olive oil |
1 garlic clove, minced |
1 1/2 teaspoons fresh oregano, minced |
1/2 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. In a bowl, combine all of the ingredients. 2. Transfer to a greased 1-qt. baking dish. 3. Bake, uncovered, at 425 degrees for 45-50 minutes or until tender, stirring twice. |
