Love the sandwich.....here is a Grecian twist to the grilled cheese. Hope you enjoyed as much as I do. I originally got this recipe from Epicurous. Goes great with a green salad for a light lunch or with soup for supper. Ingredients:
4 slices crusty bread |
3 tablespoons olive oil |
1/2 lb feta |
1 large tomato |
2 teaspoons oregano leaves, finely chopped fresh |
fresh ground black pepper |
Directions:
1. Cut four 1/2-inch-thick slices from middle of loaf and brush both sides of each slice with some oil. 2. Cut enough 1/4-inch-thick slices from feta to cover 2 slices of bread and cut tomato into 1/4-inch-thick slices. 3. Assemble 2 sandwiches with feta and tomato slices, seasoning filling with oregano, pepper, and salt. 4. In a 12-inch nonstick skillet heat 1 tablespoon oil over moderate heat until hot but not smoking and cook sandwiches until golden, about 2 minutes on each side. |
