This is a quick and easy summer sald for lunch or lite supper. Who says that healthy eating cannot be tasty! Ingredients:
2 chicken breast (diced) |
1 lettuce |
1 chickory |
1 teaspoon honey |
1 teaspoon mustard |
50g pine nuts |
1 avocado |
olive oil |
balsamic vinegar |
Directions:
1. Fry the chicken over a medium heat, after the chicken is white on the outside add the honey and mustard 2. Toast the pine nuts under the grill 3. Wash the lettuce and chickory, and put in a salad bowl 4. Slice the avocado and add to the salad bowl together with all over the other ingredients 5. Sprinkle with olive oil and balsamic vinegar 6. Season to taste |
