Great Northrn Bean Soup With Drop Dumplings |

Great on cold dreary days and during the winter months. Ingredients:
2lb. bag of great northern white beans, or navy beans. |
4/5 onions. |
5 strips bacon. |
1 ham bone or ham hock. |
4 eggs |
2cups all purpose flour. |
Directions:
1. peel and quarter onions. 2. place onions , beans, bacon and ham bone in pot and cover with water. 3. add two tbls. of salt. and 1tsp. pepper. 4. bring to boil and return to simmer with pot covered to vent. 5. add water as it evaporates until beans start to break down and become tender. 6. in a mixing bowl, add flour and make well for eggs. 7. add eggs and blend to make dumpling mix. 8. using 2 tsps, scoop with one and drop off with other into soup. 9. cook for another 1/2 hour. Yum! |
