Great Nana's Zucchini Bread |

This is Great Nana's recipe. My Great Aunt Alta also made a simliar version, only hers contained 1 Tbsp vanilla, 1 tsp. salt, only 1 tsp baking soda, and only 1/4 tsp. baking powder. Ingredients:
3 large eggs, beaten lightly |
2 cups granulated sugar |
1 cup vegetable oil |
1 teaspoon vanilla extract |
2 cups zucchini, grated |
3 cups all-purpose flour |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
3 teaspoons ground cinnamon |
1 cup nuts, chopped |
1 cup raisins |
Directions:
1. Beat eggs, sugar, oil and vanilla together until thick. 2. Fold in zucchini until blended. 3. Sift together flour, baking soda, baking powder, cinnamon. 4. Stir in nuts and raisins. 5. Combine both mixtures using a spoon, mixing just enough to moisten ingredients (will still have some lumps). 6. Bake in greased + floured loaf pans at 350 F for 1 hour or until a toothpick tests done. |
