Great Nana's Zucchini Appetizers |

From my daughter's great grandmother.. She used to work in a school cafeteria, and this was a big hit with the teachers. These are a great brunch snack. Ingredients:
1/2 cup onion, grated |
1/2 cup vegetable oil |
1/4 teaspoon dried oregano |
1/2 cup parmesan cheese, grated |
1/2 teaspoon salt (to taste) |
1 tablespoon garlic powder |
4 large eggs, beaten |
1 cup bisquick baking mix |
3 cups zucchini, skin on, cut wafer thin |
Directions:
1. Beat eggs, then add onion, oil, oregano, cheese, salt, garlic powder. 2. Using a wooden spoon, fold in the Bisquick and the zucchini slices. 3. Pour into a 9x13 greased baking dish and bake at 350 F for about 30-35 minutes (until puffed and top is lightly browned). 4. These will be very low in the pan when baked. 5. Cut into squares and serve. |
