Great Homemade Potato Bread |

The ingredients are actually the same as my Great Bread Machine White Bread, but made by hand & baked in the oven. Wonderfully moist & full of flavor. This is my own recipe Ingredients:

1 1/2 cups water |
1/2 cup milk |
4 tblspn butter |
3 tsp salt |
4 tblspn sugar |
1 1/3 cups plain mashed potato - no salt, milk or butter added |
6 1/3 cups bread flour - may need a little more, depends on your flour |
3 tsp fast rising yeast |
Directions:
1. Grease 2 bread pans - 9 1/2 x 5 1/2 inches 2. In a microwave safe bowl, place water, milk & butter 3. Heat enough to melt butter 4. Pour into large bowl of electric mixer 5. Add salt & sugar & mashed potato 6. Beat with regular beaters to mix well & disolve the sugar 7. Add approx 3 1/3 cups of flour & beat well until well combined batter is formed 8. When cooled to lukewarm, sprinkle the yeast over the batter & beat well until yeast is thoroughly combined, scraping down the sides of the bowl 9. Change beaters to bread hook 10. Add 3 more cups of flour & beat on medium speed until a soft dough is formed 11. Turn out onto a lightly floured surface & knead dough for about 4 -5 mins, incorporating a little more flour if needed until you have a dough that is soft & smooth & no longer sticky 12. Grease a large bowl 13. Place dough, smooth side down in bowl to grease the surface 14. Turn greased, smooth side up & cover with damp tea towel 15. Place in warm area to rise until doubled in size, about 40 - 45 mins 16. Punch down & divide in 2 pieces 17. On lightly floured surface, press dough out to remove air bubbles & form into loaf 18. Place in prepared bread pan, repeat with 2nd piece of dough 19. If a softer crust is prefered, brush with melted butter 20. Place in a warm area & cover with damp tea towel 21. Let rise until doubled in size, approx. 40 mins 22. Bake in a pre-heated 375 degree oven for 35 - 40 mins 23. Loaves should be golden on top & sound hollow when tapped on the bottom 24. Turn out onto wire racks 25. Brush crust again with melted butter & leave to cool |
