A great summer salad! Serve with whole grain rolls as a meal. Ingredients:
1/4 cup olive oil |
3 tablespoons lemon juice |
1 tablespoon balsamic vinegar |
3/4 teaspoon dried oregano |
salt, to taste |
pepper, to taste |
1 red bell pepper, seeded and sliced |
1 green bell pepper, seeded and sliced |
1 red onion, sliced thin |
1 seedless cucumber, sliced |
1 bunch broccoli, chopped |
12 greek olives, drained |
3 tomatoes, sliced |
12 ounces feta cheese, crumbled |
Directions:
1. In a small bowl, whisk together first 6 ingredients for dressing. 2. In a large bowl, toss remaining ingredients. 3. Pour dressing over the salad and toss again. |
