Great Grandmother's Green Bean Salad |

Unusual green bean salad I've never seen anyone else prepare. Ingredients:
1lb fresh whole young green beans (haricots), stemmed |
about 1/4c finely minced white onion |
2tablespoons white vinegar |
2tablespoons granulated white sugar |
1cup half & half |
fresh ground black pepper to taste |
Directions:
1. cook beans till just tender, and chill in ice water to stop cooking. 2. in a glass bowl, place minced onion, sugar, and vinegar. stir well to dissolve sugar. add half & half and thoroughly stir together. add drained green beans and gently toss together to thoroughly coat. cover dish with plastic wrap and refrigerate over night. this should be gently tossed several more times to coat beans well. before serving, grind fresh black pepper to taste and toss. wonderful summer alternative to usual 3bean salad. |
