This is great alone, in a sandwich or really really good in my savory cream puffs - listed already. Served in a tea house in Jacksonville Fl. ( my pre-vegetarian days) Ingredients:
2 lbs. cooked chicken breast |
1/3 cup toasted pecans chopped |
1/3 cup diced onion |
1 cup diced celery |
1/8 tsp. curry powder |
1/4 cup chicken stock |
mayonnaise, as needed |
salt and pepper to taste |
Directions:
1. Dice cooked chicken till fine. 2. Add remaining ingredients. 3. Mix until chicken is well coated. 4. Serve on a bed of lettuce, as a sandich or in my Savory Cream Puffs. (great for a luncheon) |
