Gray Whale Inn Blueberry Compote |

From Murder on the Rocks by Karen MacInerney. Serve warm over pancackes, french toast or ice cream. Ingredients:
1 1/2 cups blueberries |
1/4 cup maple syrup |
1/2 lemon, juice of |
1 teaspoon vanilla |
2 teaspoons cornstarch (dissolved in a small amount of cold water) |
Directions:
1. Bring blueberries and syrup to a simmer and cook until blueberries are hot and bubbly. 2. Add lemon juice and vanilla and simmer a moment longer. 3. Stir in cornstarch. |
