The Gray Goose Inn is an English country house inn nestled in a stand of century-old oak trees overlooking picturesque Lake Palomara located in northwestern Indiana near the Lake Michigan shore in the heart of dunes country. Ingredients:
12 eggs |
1/2 cup all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon salt (optional) |
1 lb monterey jack cheese, grated |
3 cups small curd cottage cheese |
1/2 cup butter, softened |
4 ounces jalapenos, seeded and chopped |
1 (4 ounce) can chilies, drained and chopped |
1 (2 ounce) jar pimientos, drained and chopped |
1 (7 ounce) can whole kernel corn, drained |
Directions:
1. Preheat oven to 350F and butter a 13 x 9 baking pan. 2. Beat eggs until light; add all remaining ingredients and mix well. 3. Pour into prepared dish and bake for 45 to 55 minutes or until puffy and golden and a knife inserted in the center comes out clean. |
