Ingredients:
5 tablespoons butter
5 tablespoons flour
7 cups beef stock
1 cup buttered crouton
1/4 cup grated swiss cheese
Directions:
1. Melt butter in a deep saucepan.
2. Add flour and stir well.
3. Cook over low heat until deep brown, stirring constantly.
4. Gradually add stock, stirring constantly.
5. Bring to a boil.
6. Cover and simmer over medium heat for 1 1/2 hours, stirring occasionally.
7. Top with croutons and grated cheese.
