2 lbs boiling potatoes |
1 large garlic clove, minced |
2 cups heavy cream |
1 1/2 cups milk |
1 1/2 teaspoons salt |
1/2 teaspoon pepper |
1 tablespoon butter |
3/4 cup swiss cheese, grated |
Directions:
1. Peel potatoes and slice fairly thin (1/8 inch). 2. Do not soak in water. 3. Combine potatoes slices, garlic, cream, milk, salt and pepper in large heavy saucepan. 4. Bring to boil over medium heat, stirring constantly for a few minutes until mixture begins to thicken. 5. Butter a 9x13 inch baking dish and pour in potato mixture. 6. Sprinkle Swiss cheese over top and place on cookie sheet to catch drippings that bubble over. 7. Bake at 400. 8. After 15 minutes when cheese has slightly browned, cover baking dish with foil and continue baking 45 minutes. |
