This recipe goes with Grapefruit Frosted Cupcakes Ingredients:
2/3 cup superfine sugar |
1 egg white |
1 tablespoon light corn syrup |
1 tablespoon fresh grapefruit juice |
1/8 teaspoon salt |
2 teaspoons grated grapefruit rind |
Directions:
1. Combine first 5 ingredients in the top of a double boiler; beat at low speed of an electric mixer 30 seconds or just until blended. Place over boiling water; beat at high speed 7 minutes or until stiff peaks form. Remove from heat; stir in rind.
