This is a recipe I got from my favorite blogger Suzanne McMinn (yes, the romance novelist.) It is fantastic. I switched it up a little because of what I had on hand and nutrition issues... Here is the original recipe: /farm-bell-recipes/concord-grape-pie/ Ingredients:
1 pie crust (fresh or frozen) |
1 cup fresh grapes (i used green, ms. mcminn uses concord. make sure they are seeded) |
2 tablespoons water |
1 cup sugar |
1/2 cup butter, melted |
2 tablespoons cornstarch, heaping |
3 eggs, separated |
2 -3 tablespoons sugar |
Directions:
1. Preheat oven to 350 degrees. 2. Mash grapes (in skins) with water. 3. In a separate bowl mix sugar, butter, cornstarch, and 3 egg yolks. 4. Stir in mashed grapes. 5. Pour custard into pie crust. 6. Bake for 45 minutes or until custard is firm. 7. Beat up a meringue with 3 egg whites and remaining sugar. Top cooked pie with meringue and bake for another 15-20 minutes. 8. Chill until room temperature and serve. |
