Tuck some tiny new potatoes and baby carrots around the chicken for a complete meal...so simple and delicious! Ingredients:
1 (4-lb) roasting chicken |
1 teaspoon salt |
1/4 teaspoon pepper |
1 onion, quartered |
8 cloves garlic, pressed |
1/4 cup fresh rosemary, chopped |
1/4 cup butter, melted |
Directions:
1. Place chicken in a large greased roasting pan; sprinkle with salt and pepper. Place onion, garlic and rosemary inside chicken; brush butter over chicken. 2. Bake, uncovered, at 400° for 1 1/2 hours, basting with pan juices, until golden and juices run clear when chicken is pierced with a fork. |
