In Texas, HEB has their brand of Dark Chocolate Granola cereal - and that is what I used in this recipe...you could sub granola and dark chocolate pieces if you can't find something like this. The HEB brand is full of fiber as well. Read more . If you like your muffins sweeter, you could add 1/4 cup brown sugar - or play around with different flours. You can also add 1/4 cup chopped nuts if you want. Ingredients:
granola 1 and 1/2 cups |
oats flour 2/3 cup – quick cooking oats in a food processor works |
whole wheat flour 1 cup |
flax seeds or powder 2 tablespoons |
baking powder 2 teaspoons |
baking soda 1 teaspoon |
applesauce (i used unsweetened) 1 and 1/2 cups |
vanilla lite soy milk 1/2 cup |
yogurt (instead of 2 eggs) 1/2 cup – (i used one single serving vanilla with fiber & cereal) |
granola for topping |
Directions:
1. Preheat oven to 400F. Grease the muffin tin. 2. Combine the dry ingredients together in a big bowl. From granola to baking soda. 3. In another medium size bowl, whisk together the applesauce, milk, and yogurt. 4. Add the wet ingredients to the flour mixture and mix until just combined. 5. Divide evenly into prepared muffin tin. Sprinkle little granola on top. 6. Bake 25 minutes or until toothpick inserted in center comes out clean. My muffin cup is a little larger than standard size, so adjust your time as needed. 7. Let cool slightly in the tin and then remove to a cooling rack. |
