Granola Bars (Gluten Free) |

Great for the whole family. (This is the Gluten Free flour mix that i use: 2 cups brown rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour) Ingredients:
1/2 cup sugar |
1/3 cup coconut oil |
1 egg |
1/4 cup honey |
2 tablespoons peanut butter |
1 teaspoon vanilla |
3/4 cup flour (see recipe description) |
1 teaspoon baking soda |
1/4 teaspoon salt |
2 cups crisp rice cereal |
1/2 cup ground flax seeds |
1/2 cup nuts or 1/2 cup fruit, chopped |
1/2 cup coconut |
1/2 cup chocolate chips |
2 tablespoons acai berries, dried powder |
2 tablespoons goji berries, dried powder |
Directions:
1. Preheat oven to 350°F. 2. Mix sugar and oil. Add egg, and then honey, peanut butter, and vanilla. 3. In a seperate bowl combine flour, baking soda, salt, ground flax, goji and acai. 4. Combine together. 5. Mix in rice cereal, fruit/nuts, coconut, chocolate chips. 6. Oil a 9 x 13 pan. 7. Press mixture into pan. 8. Bake for 20 minutes. |
