My husband found this recipe, we made them for his marathon and he loved them. I have substituted peanuts, for the walnuts and omitted the raisins and they still taste great. Chewy yet crunchy. Ingredients:
2 cups quick-cooking oats |
1 cup all-purpose flour |
3/4 cup packed brown sugar |
3/4 cup raisins |
1/2 cup wheat germ |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 cup chopped walnuts |
1/2 cup vegetable oil |
1/2 cup honey |
1 large egg |
2 teaspoons vanilla extract |
Directions:
1. Preheat oven to 350°. 2. Line a 13x9 inch pan with foil and spray with Pam. 3. In a large bowl, stir together oats, flour, brown sugar, raisins,wheat germ, salt, cinnamon, and walnuts. 4. In a smaller bowl, thoroughly blend oil, honey, egg, and vanilla; pour into flour mixture, and mix by hand until the liquid is evenly distributed. 5. I use rubber gloves for this. 6. Press evenly into the prepared baking pan. 7. Bake 25-30 minutes in the oven or until the edges are golden. 8. Cool completely in pan before turning out onto a cutting board and cutting into bars. |
