1 cup pork crackling |
1 cup white cornmeal |
1 cup self rising flour |
1/4 teaspoon salt |
1/4 teaspoon baking powder |
1 cup milk or 1 cup buttermilk |
2 eggs, lightly beaten |
1/3 cup bacon drippings (may use cooking oil) |
Directions:
1. Preheat oven to 425°F. 2. Mix together cornmeal, flour, baking powder, and salt. 3. Separately, mix together milk/buttermilk, eggs, and bacon drippings, Stir until smooth, then fold in cracklings. 4. Pur into a greased 10 inch cake pan and bake at 425F for about 20 minutes, or until golden brown. 5. Cut into wedges and serve warm. |
