Granny Z's Pumpkin Cake With Cream Cheese Frosting |

This is my grandmother's recipe - she was an excellent baker! Ingredients:
4 eggs |
1 cup oil |
2 cups sugar |
1 (15 ounce) can pumpkin |
2 cups cake flour |
2 teaspoons baking powder |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 teaspoons cinnamon |
1/2 teaspoon ginger |
1/2 teaspoon clove |
1/2 teaspoon nutmeg |
1 (8 ounce) package cream cheese |
1/2 cup margarine or 1/2 cup butter |
1 lb powdered sugar |
1 teaspoon vanilla |
Directions:
1. Beat together eggs, oil, sugar and pumpkin. 2. Sift together cake flour, baking powder, baking soda, salt, cinnamon, ginger, cloves and nutmeg. 3. Add sifted ingredients to pumpkin mixture. 4. Mix well. 5. Grease and flour jelly roll pan. 6. Pour into pan and bake 25-30 minutes at 350 degrees. 7. Frosting: Mix cream cheese, margarine, powdered sugar and vanilla together well. 8. Cool cake completely before frosting. |
