Granny Royse's Coconut Cream Pie |

Wonderful coconut pie with meringue piled high Ingredients:
3/4 cup sugar |
1/3 cup all-purpose flour |
1/4 teaspoon salt |
2 cups milk |
3 egg yolks |
1 cup coconut |
2 tablespoons butter |
1 teaspoon vanilla |
3 egg whites |
6 tablespoons sugar |
1/3 cup coconut |
1 1/3 cups all-purpose flour |
1/2 cup vegetable shortening |
1/2 teaspoon coarse salt |
3 tablespoons ice water |
Directions:
1. In saucepan combine sugar flour and salt, gradually stir in milk, ‘cook and stir over medium heat until it thickens . Cook 2 minutes longer. 2. Remove from heat add 1 cup of coconut. Put a 3 egg meringue with 1/3 coconut sprinkled on top. 3. Stir in small amounts hot mixture into yolks return to hot mix, cook 2 minutes stirring constantly add vanilla and butter .cool and pour into baked shell. 4. Beat egg whites until stiff, add sugar beat again, spoon onto pie. Bake at 400 until light brown. |
