This is a quick, no-bake granola bar recipe that works perfectly for picky eaters. Our family likes to roll the granola into bite-size spheres that mimic the Granola Bites from the grocery store. Ingredients:
1 1/4 cups crispy rice cereal (the kind that goes snap, crackle, pop ) |
1 cup quick-cooking oats |
1/4 cup raisins |
1/4 cup brown sugar |
1/8 cup corn syrup |
1/8 cup honey |
1/4 cup peanut butter (crunchy or smooth) |
1/2 teaspoon vanilla extract |
Directions:
1. Mix the cereal, oats, and raisins in a mixing bowl and set aside. 2. In a small pot on the stove, stir together the brown sugar, corn syrup, and honey over medium to medium-high heat and bring to a rolling boil. 3. Continue to boil for 1 minute, stirring constantly. 4. Remove from heat and blend in the peanut butter and vanilla. 5. Pour over the cereal/oat/raisin mixture and combine. 6. At this point, you can roll into 1/2 inch spheres to make granola bites, or press into a small square or rectangular dish to form bars. 7. Store tightly covered. |
