Grandpa's Special Bean Soup |

This is a great soup for a cold day or for dinner. Beans and veggies add texture and flavor. Very tasty. Ingredients:
2 (15 1/2 ounce) cans goya red kidney beans, drained |
2 tablespoons olive oil |
1 cup diced carrot |
1 cup diced celery |
1/2 lb ground beef |
1 tablespoon chopped garlic |
1 tablespoon goya adobo all purpose seasoning |
7 cups water |
3 packages goya beef bouillon |
1 (28 ounce) can whole tomatoes, chopped (reserve fluid) |
1 (16 ounce) bag frozen vegetables |
1 cup elbow macaroni |
salt |
pepper |
Directions:
1. In large pot, saute diced veggies in oil over low heat until golden. 2. Add ground beef and cook, breaking into 1/2 inch chunks. 3. Add Goya Adobo and garlic and saute 3 minutes. 4. Add reserved tomato liquid, water and bouillon. 5. Bring to boil. 6. Add tomatoes, frozen veggies and elbow noodles. 7. Return to boil and simmer 7 minutes. 8. Add Goya beans, stir, and cook 3 minutes. |
