This is the best meatball recipe. My grandpa, Lawrence B., always made them for us. I like to shape them into large meatballs instead of small ones. They are great served with mashed or scalloped potatoes and grean beans. Enjoy! Ingredients:
3 lbs ground beef |
1 (12 ounce) can evaporated milk |
1 cup oatmeal |
1 cup cracker crumb |
2 eggs |
1/2 cup onion (chopped) |
1/2 teaspoon garlic powder |
2 teaspoons salt |
1/2 teaspoon pepper |
2 teaspoons chili powder |
2 cups ketchup |
1 cup brown sugar |
1/2 teaspoon liquid smoke (to taste) |
1/2 teaspoon garlic powder |
1/4 cup onion (chopped) |
Directions:
1. To make meatballs, combine meatball ingredients. Mixture will be soft. 2. Wet hands and shape into walnut-sized balls or larger if desired. 3. To make sauce, combine all ingredients and stir until sugar is dissolved. 4. Place meatballs in a 13 x 9x 2 inch pan. 5. Pour sauce over each meatball. 6. Bake at 350 degrees for 1 hour for small meatballs, or l hour 15 minutes or longer for large ones until thoroughly cooked inside. 7. Yield: 80 small or 25 large meatballs. These meatballs can be frozen before cooking on waxed paper-lined cookie sheets and then stored in plastic freezer bags in the freezer, or they may be baked and then frozen as desired. |
