My father's sloppy joe recipe; my children call him Grandpa Jo - hence the recipe name. He always made it to taste, so I don't have exact quantities. Ingredients:
1 -2 lb ground beef |
1/4-1/2 cup ketchup |
8 ounces tomato paste or 8 ounces tomato sauce |
chili powder |
1 onions, chopped or 1 onion powder |
italian seasoning |
oregano |
1/4-1/2 cup parmesan cheese |
Directions:
1. Brown beef and onion; if using onion powder, add salt to taste. 2. Add combination of ketchup, paste, and sauce; the amount used will depend on how much meat. Use more ketchup for a sweeter taste. 3. Add chili powder and seasonings. I usually dust the meat with the chili powder twice (and yes, this will make it mild, but I have children that won't eat it if I make it spicier) and the italian seasoning once with a few dashes of oregano. Stir those together and let simmer for a minute or so. Taste - add more of the seasonings you want. (If I use closer to two pounds, I usually like more chili powder.). 4. After the seasonings are how you want them, add the parmesan cheese. |
