Grandmother's Hot Chicken Salad |

Another of our comfort foods. My grandmother made this recipe, as well as my mom, and now I make it for my family. Ingredients:
3 cups chicken, cooked and chopped |
1/2 cup slivered almonds or 1/2 cup chopped almonds |
1 tablespoon minced onion |
1 1/2 tablespoons lemon juice concentrate |
1/8 teaspoon pepper |
1 cup mayonnaise |
1 1/2 cups diced celery |
1 1/2 cups grated cheddar cheese |
1 1/2 cups crushed potato chips |
Directions:
1. Preheat oven to 375 degrees. 2. Combine chicken, almonds, onion, lemon juice, celery, and pepper in mixing bowl. 3. Add mayonnaise and toss. 4. Place in casserole dish (smaller than 9 X 13). 5. Sprinkle with cheese, then crushed chips. 6. Cover with foil. 7. Bake for approximately 25 minutes. |
