Grandmas Potato Chip Cookies

This is one of the contributions to our 2008 cookie exchange. It came from a friend of my daughter who remembered this cookie from her childhood when her grandmother made them for her - very rich and buttery! NOTE: Potato Chip Cookies are pictured in top right of tray, between the green spinkled cookies and the rolled krumkake.
Ingredients:
4 sticks butter (yes, four sticks of butter, or 1 pound!)
1 cup sugar
2 teaspoons vanilla extract
31/2 cups flour
2 to 3 cups finely crushed potato chips (2 cups is what jeanette used)
1/2 cup finely chopped pecans or walnuts, optional
1 package milk chocolate chips, optional (jeanette doesn’t use them)
powdered sugar for coating warm cookies
Directions:
1. Cream together butter and sugar; stir in vanilla.
2. Stir in flour.
3. Stir in crushed potato chips and then the nuts and chocolate chips, if using them.
4. Dough may be crumbly, so you may need to use your hands to shape them into balls.
5. Place or drop dough by spoonfuls onto lightly greased baking sheet; press down just a bit with fingertips.
6. Bake at 350 degrees for 10 to 15 minutes, until just beginning to brown on bottoms.
7. Let cookies cool for a few minutes, then remove them from the baking sheet and roll them in powdered sugar.
8. Cool completely before storing.
