Grandma's Oatmeal Cookies

My grandma's recipe for cookies that are always a hit. My grandma was one of the best cooks I have ever known; she taught me much of what I know about cooking. I love her and still miss her.
Ingredients:
1 cup shortening or 1 cup margarine
1 cup sugar
1 cup brown sugar
2 eggs
2 tablespoons vanilla
1 1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
3 cups chopped nuts
3 cups quick oats
1 cup raisins
1 cup shredded coconut, well packed
Directions:
1. Preheat oven to 350 degrees.
2. Cream shortening or margarine and sugars.
3. Mix in eggs and vanilla.
4. Sift flour, salt, and soda, and fold into creamed mixture. (I like to plump my raisins before adding them. If you do, do not sift the flour.).
5. Fold in oats, nuts, raisins, and coconut.
6. Drop by spoonful or scoop onto cookie sheet.
7. Bake for 8-10 minutes or until golden brown.
